- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 4 cloves fresh garlic, minced
- 1 cup long-grain rice
- 1 bell pepper, diced
- 1 medium onion, diced
- 2 tbsp low-sodium soy sauce
- 2 cups chicken broth
- 1 tsp cumin powder
- 2 tbsp olive oil
Instructions
- Prepare all ingredients by chopping bell peppers and onions, and mincing garlic.
- In a large skillet over medium heat, add olive oil and sauté chicken breasts until golden brown (5-7 minutes). Remove and set aside.
- In the same skillet, sauté onions, bell peppers, and garlic until fragrant (3-4 minutes).
- Stir in rice, soy sauce, and chicken broth; bring to a boil.
- Return chicken to the skillet, cover, reduce heat to low, and simmer for 20-25 minutes until rice absorbs liquid.
- Fluff with a fork before serving.
