- 8 oz fresh asparagus, trimmed
- 1 cup cherry tomatoes, halved
- 4 oz burrata cheese
- 1/4 cup fresh basil leaves, torn
- 2 tbsp extra virgin olive oil
- 1 tbsp balsamic vinegar
- Salt and pepper to taste
Instructions
- Blanch asparagus in boiling water for 2 minutes until bright green. Transfer to an ice bath to cool.
- In a bowl, combine halved cherry tomatoes.
- Slice cooled asparagus into bite-sized pieces and add to the tomatoes.
- Tear the burrata into pieces and add to the bowl along with fresh basil.
- Whisk together olive oil and balsamic vinegar; season with salt and pepper.
- Drizzle dressing over salad, gently toss to combine, and serve.
