Ingredients
- 1 cup old-fashioned rolled oats
- 1 cup milk (or milk alternative)
- 1/2 cup brewed espresso or strong coffee
- 2 tablespoons brown sugar
- 1 teaspoon vanilla extract
- 1 tablespoon chia seeds
Instructions
- Brew a strong cup of espresso or coffee and let it cool slightly.
- In a bowl, mix together rolled oats and chia seeds.
- In another bowl, whisk together milk, cooled espresso, brown sugar, and vanilla extract until smooth.
- Combine the wet ingredients into the dry mixture and stir until well mixed.
- Transfer to an airtight container and refrigerate overnight (or for at least four hours).
- In the morning, stir well before serving. Top with fresh fruit or nuts if desired.
