- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 6 cups mixed greens (spinach, arugula, romaine)
- 1 cup fresh strawberries, sliced
- 1 cup fresh blueberries
- ½ cup crumbled feta cheese
- ¼ cup balsamic vinaigrette
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- In a large bowl, mix together olive oil, salt, pepper, and balsamic vinaigrette. Add chicken breasts and coat well. Let marinate for at least 30 minutes.
- Preheat the grill or grill pan over medium-high heat.
- Cook marinated chicken on the grill for 6-7 minutes per side until golden brown and juices run clear. Allow to rest before slicing.
- In a large serving bowl, combine mixed greens, sliced strawberries, blueberries, and crumbled feta cheese. Toss gently.
- Drizzle additional balsamic vinaigrette over the salad just before serving and toss lightly.
- Arrange sliced grilled chicken on top of the salad mixture for an appealing presentation.
