Ingredients

  • 1/2 cup powdered sugar
  • 1 tbsp lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until smooth. Add the egg and vanilla; mix thoroughly.
  3. Gradually sift in the flour and incorporate until just combined.
  4. In another bowl, mix cream cheese with powdered sugar and lemon juice until smooth for your filling.
  5. Scoop out cookie dough and flatten it slightly. Place a dollop of cheesecake filling in the center and wrap the dough around it.
  6. Bake on parchment-lined trays for 10-12 minutes or until golden brown.
