- 2 cups leftover mashed potatoes
- 1 cup shredded sharp cheddar cheese
- 2 large eggs
- 1 cup all-purpose flour (or gluten-free)
- 1 tsp baking powder
- 3 green onions, chopped
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C) and grease a muffin tin.
- In a mixing bowl, combine mashed potatoes, cheese, eggs, flour, baking powder, green onions, salt, and pepper until well mixed.
- Spoon the mixture into the muffin tin, filling each cup approximately three-quarters full.
- Bake for 20-25 minutes until golden brown and a toothpick inserted comes out clean.
- Let cool for 5 minutes before transferring to a wire rack.
