Instructions
- Heat olive oil in a large skillet over medium heat. Sauté sliced onion and bell pepper for about 5 minutes until softened.
- Season chicken breasts with fajita seasoning, salt, and pepper. Add them to the skillet alongside the veggies.
- Cook chicken for about 6-7 minutes on each side until fully cooked; let rest before slicing into strips.
- In serving bowls, layer cooked rice topped with sautéed vegetables and sliced chicken.
- Finish with fresh lime juice and any desired toppings.
