Ingredients
- 200g high-quality dark chocolate (70% cocoa)
- 300ml heavy cream
- 100g toasted hazelnuts
- 3 large egg whites
- 75g granulated sugar
Instructions
- Melt the dark chocolate in a heatproof bowl over simmering water until smooth. Remove from heat and let cool slightly.
- In a separate bowl, whip the heavy cream until soft peaks form.
- In another clean bowl, whisk egg whites until soft peaks form; gradually add sugar and whisk until stiff peaks form.
- Gently fold half the whipped cream into the melted chocolate, then fold in the remaining whipped cream followed by the whipped egg whites.
- Roughly chop the toasted hazelnuts and fold them into the mousse mixture.
- Spoon into serving dishes and refrigerate for at least two hours before serving.
