Ingredients
- 1 pound ground beef (80/20 fat content)
- 4 slices Swiss cheese
- 4 slices rye or sourdough bread
- 1 large onion (sweet or yellow)
- 2 tablespoons unsalted butter
- Salt and pepper to taste
Instructions
- Slice the onion thinly. In a skillet over medium heat, melt 1 tablespoon of butter and sauté the onions until caramelized (10-15 minutes).
- Meanwhile, form the ground beef into two patties about one inch thick and season with salt and pepper.
- In another skillet over medium-high heat, melt remaining butter and cook the patties for about 4 minutes on each side or until desired doneness.
- Place a slice of Swiss cheese on each patty while cooking to allow it to melt slightly, then top with caramelized onions.
- Butter one side of each slice of bread. In a separate pan, grill one slice butter-side down with the patty and toppings; add another slice on top.
- Cook until golden brown (about 3 minutes), then flip and grill the other side until crispy.
