- 1 lb large shrimp, peeled and deveined
- 2 cups English cucumbers, thinly sliced
- 1 cup plain Greek yogurt
- ¼ cup fresh dill, chopped
- 2 cloves garlic, minced
- Juice of 1 lemon (about 2 tbsp)
- Salt and pepper to taste
Instructions
- Cook the shrimp in boiling water for 2-3 minutes until pink. Drain and cool.
- Slice cucumbers into thin rounds or half-moons.
- In a bowl, mix Greek yogurt, garlic, dill, lemon juice, salt, and pepper until well combined.
- Gently fold in cooled shrimp and cucumber slices.
- Chill in the refrigerator for at least 30 minutes before serving.
