Instructions
- Crack the eggs into a mixing bowl and whisk until bubbly and bright yellow. Fold in the cottage cheese until well combined.
- Heat a non-stick skillet over medium heat and melt the butter without browning it.
- Pour the egg and cottage cheese mixture into the pan, stirring gently as it begins to set.
- Cook for 3-4 minutes, stirring occasionally, until the eggs are soft but not fully cooked through.
- Season with salt and pepper before removing from heat. Optionally, sprinkle with fresh herbs just before serving.
