Instructions
- Gather all ingredients and prepare them on your countertop.
- Season chicken breasts generously with salt and pepper.
- Sear the seasoned chicken in olive oil over medium-high heat for 6-7 minutes per side until golden brown; remove and set aside.
- In the same skillet, sauté minced garlic for one minute, then add sun-dried tomatoes.
- Pour in heavy cream and chicken broth; let simmer.
- Add fresh spinach and cook until wilted (about 2 minutes).
- Return seared chicken to the skillet; simmer in the sauce for 5 minutes until cooked through.
