- 1 lb fresh salmon fillets (skinless)
- 1 cup panko breadcrumbs
- 2 large eggs (beaten)
- 1/2 cup all-purpose flour
- 1/4 cup sweet chili sauce
- 1 tbsp sriracha sauce (adjust for heat)
- 1 tbsp lime juice
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Cut salmon into bite-sized pieces and season with salt and pepper.
- Set up a dredging station: place flour in one bowl, beaten eggs in another, and panko breadcrumbs mixed with a pinch of salt in the third.
- Dip each salmon piece in flour, then egg wash, followed by the panko mixture until fully coated.
- Arrange coated salmon bites on the baking sheet. Bake for 15-20 minutes or until golden brown and crispy.
- In a small bowl, mix sweet chili sauce, sriracha sauce, and lime juice.
- Drizzle sauce over cooked bites before serving.
