Crispy, buttery, and cheesy smashed potatoes are the ultimate comfort food. This simple recipe transforms small potatoes into a golden-brown delight that will impress at any meal.

Ingredients

  • Baby Yukon Gold or red potatoes
  • Extra virgin olive oil
  • Unsalted butter
  • Sharp cheddar cheese (or mozzarella)
  • Fresh chives or parsley
  • Salt and pepper

Instructions

  1. Wash the small potatoes under cool water and place them in a pot filled with salted water.
  2. Boil over medium-high heat for 15-20 minutes until fork-tender. Drain and let cool for 5 minutes.
  3. Gently smash each potato using a potato masher or fork until flattened but intact.
  4. Drizzle olive oil over the smashed potatoes, then sprinkle with salt and pepper. Melt butter and drizzle it on top.
