Ingredients
- Baby Yukon Gold or red potatoes
- Extra virgin olive oil
- Unsalted butter
- Sharp cheddar cheese (or mozzarella)
- Fresh chives or parsley
- Salt and pepper
Instructions
- Wash the small potatoes under cool water and place them in a pot filled with salted water.
- Boil over medium-high heat for 15-20 minutes until fork-tender. Drain and let cool for 5 minutes.
- Gently smash each potato using a potato masher or fork until flattened but intact.
- Drizzle olive oil over the smashed potatoes, then sprinkle with salt and pepper. Melt butter and drizzle it on top.
- Generously sprinkle shredded cheese over each potato. Bake in a preheated oven at 425°F (220°C) for 15-20 minutes until golden brown.
