- 1 green bell pepper, chopped
- 1 cup pineapple chunks (fresh or canned)
- 1/2 cup low-sodium soy sauce
- 1/4 cup brown sugar
- 1/4 cup rice vinegar
Instructions
- Preheat oven to 400°F (200°C) and coat a baking dish with nonstick spray.
- Cut chicken into bite-sized pieces and season with salt and pepper.
- In a bowl, mix soy sauce, brown sugar, rice vinegar, garlic, and ginger until smooth.
- Combine chicken, bell peppers, and pineapple in the baking dish; pour sauce over everything.
- Bake for 25-30 minutes until chicken reaches an internal temperature of 165°F (75°C).
- Serve warm, drizzled with extra sauce and garnished with sesame seeds or green onions.
