- 2 cups Biscoff cookies, crushed
- ½ cup unsalted butter, melted
- 8 oz cream cheese, softened
- ¾ cup granulated sugar
- ½ cup sour cream
- 1 cup heavy whipping cream
- 1 tsp vanilla extract
Instructions
- Preheat oven to 350°F (175°C). In a bowl, mix crushed Biscoff cookies with melted butter until combined.
- Press mixture into the bottom of a springform pan and bake for 10 minutes until slightly golden.
- In a mixing bowl, beat cream cheese and sugar until smooth. Add sour cream and vanilla; mix until fully incorporated.
- Whip heavy cream until soft peaks form, then gently fold into the cream cheese mixture.
- Pour filling over the cooled crust and smooth the top. Cover and chill in the refrigerator for at least four hours or overnight.
- Serve topped with whipped cream and crushed Biscoff cookies.
