Instructions
- Preheat oven to 350°F (175°C). Combine crushed cookies with melted butter and press into a springform pan. Bake for 10 minutes and allow to cool.
- Beat softened cream cheese with sugar until fluffy. Gradually add heavy cream, cocoa powder, and Baileys, mixing until smooth.
- Pour the filling over the cooled crust and chill tightly covered for at least four hours or overnight.
- For ganache, heat heavy cream until steaming, pour over chopped chocolate, and stir until glossy. Drizzle over chilled cheesecake.
