Instructions
- Toast the bread until golden brown.
- In a bowl, mash the avocado with lemon juice, salt, and pepper.
- Poach the eggs in simmering water for 3-4 minutes until whites are set.
- Spread the mashed avocado on the toasted bread and top with poached eggs.
