- 4 medium beets
- 4 oz goat cheese
- 2 cups arugula
- 1/2 cup walnuts (toasted)
- 2 tbsp balsamic vinegar
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C). Wrap each washed beet individually in aluminum foil and roast for 45-60 minutes until fork-tender.
- Allow the beets to cool, then peel off the skins and cut into bite-sized pieces.
- In a large bowl, combine the beets with arugula.
- Crumble goat cheese over the salad and sprinkle in toasted walnuts for added crunch.
- Drizzle with balsamic vinegar and olive oil, then season with salt and pepper. Toss gently to combine.
