- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 16 oz cream cheese, softened
- 1 cup full-fat sour cream
- ¾ cup granulated sugar
- 1 tsp pure vanilla extract
- 2 cups fresh blackberries
- 3 large eggs
Instructions
- Preheat oven to 325°F (160°C). Mix graham cracker crumbs with melted butter and press into the bottom of a springform pan.
- Beat softened cream cheese until smooth. Gradually add sugar and blend well.
- Incorporate sour cream and vanilla extract until fully mixed.
- Add eggs one at a time on low speed to avoid overmixing. Gently fold in blackberries.
- Pour filling over the crust and bake for 50-60 minutes until edges are set but center jiggles slightly.
- Cool completely at room temperature, then chill in the fridge for at least 4 hours before serving.
