- 4 bell peppers (red, yellow, or green)
- 2 cups shredded cooked chicken
- 1/2 cup buffalo sauce
- 4 oz cream cheese, softened
- 1 cup shredded cheddar cheese
- 2 green onions, sliced
- 1 tablespoon olive oil
Instructions
- Preheat your oven to 375°F (190°C).
- Slice the tops off the bell peppers and remove the seeds.
- In a mixing bowl, combine the chicken, buffalo sauce, and cream cheese until well mixed.
- Generously fill each pepper with the chicken mixture.
- Top each stuffed pepper with shredded cheddar cheese.
- Place the peppers upright in a baking dish and cover with aluminum foil.
- Bake for 25 minutes, removing foil for the last 10 minutes to brown the cheese.
- Garnish with sliced green onions and serve hot.
