Ingredients
- 1 medium green cabbage, chopped
- 2 medium carrots, diced
- 2 celery stalks, chopped
- 1 medium onion, diced
- 3 garlic cloves, minced
- 1 can (14.5 oz) diced tomatoes
- 4 cups low-sodium vegetable broth
- 1 tsp fresh thyme (or to taste)
- 1 tsp fresh rosemary (or to taste)
- 1/2 tsp black pepper (or to taste)
- Juice of 1 lemon
Instructions
- Heat a large pot over medium heat and drizzle in olive oil. Sauté chopped onions and minced garlic until fragrant.
- Add diced carrots and celery; cook until slightly softened (about 5 minutes).
- Stir in chopped cabbage and continue cooking until wilted (approximately 3-4 minutes).
- Pour in vegetable broth and diced tomatoes; stir well and bring to a simmer.
- Season with thyme, rosemary, and black pepper; let simmer for 20-25 minutes.
- Just before serving, squeeze fresh lemon juice into the pot.
