Ingredients
- 8 ounces fettuccine or linguine
- 1 pound large shrimp, peeled and deveined
- 2 tablespoons Cajun seasoning
- 1 tablespoon olive oil
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 cup diced tomatoes (fresh or canned)
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Cook pasta according to package instructions until al dente; drain and set aside.
- In a large skillet over medium heat, heat olive oil. Sauté minced garlic until fragrant (about 1 minute).
- Add shrimp seasoned with Cajun seasoning; cook until pink (approximately 3-4 minutes).
- Pour in heavy cream and diced tomatoes; simmer for about 5 minutes until sauce thickens slightly.
- Toss in cooked pasta, stirring well to combine; stir in Parmesan cheese and season with salt and pepper.
- Serve hot, garnished with fresh parsley.
