Instructions
- Preheat oven to 375°F (190°C).
- In a bowl, combine ground chicken, breadcrumbs, parmesan, garlic, salt, and pepper. Form into 1-inch meatballs.
- Heat olive oil in a skillet over medium heat and sear meatballs until golden brown (8-10 minutes).
- Pour Alfredo sauce over meatballs and simmer on low heat for 5-7 minutes.
- Slice sub rolls lengthwise without cutting all the way through.
- Assemble subs with several meatballs, drizzle with more Alfredo sauce, and top generously with mozzarella.
- Bake on a baking sheet for 10-12 minutes until cheese is melted and golden.
