- 3 tbsp hummus (classic or roasted garlic)
- 2 large whole wheat tortilla wraps
- 2 tbsp lemon juice (freshly squeezed)
- 1 tsp ground cumin
- 1 tsp paprika
- Salt and pepper to taste
Instructions
- Rinse the canned chickpeas thoroughly and set aside.
- Dice the bell peppers, cucumbers, and carrots into bite-sized pieces.
- In a mixing bowl, combine the chickpeas with chopped veggies.
- Add hummus and lemon juice; mix until well combined.
- Season with cumin, paprika, salt, and pepper; gently fold to combine.
- Place a generous scoop of the mixture on each tortilla wrap; leave space on edges.
- Roll up tightly, folding in the sides as you go; slice in half if desired.
- Serve immediately or pack for later.
