Ingredients
- 3–4 boneless, skinless chicken breasts
- 4 cups fresh baby spinach
- 1 cup heavy cream
- 3 garlic cloves, minced
- 2 tablespoons olive oil
- ½ cup grated Parmesan cheese
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium-high heat. Season chicken with salt and pepper, cooking for about 6 minutes on each side until the internal temperature reaches 165°F (75°C). Remove from pan.
- In the same skillet, sauté minced garlic for 1 minute until fragrant.
- Add fresh spinach and stir until wilted (2-3 minutes).
- Pour in heavy cream and simmer gently; stir in Parmesan until melted.
- Return cooked chicken to the skillet, spooning sauce over each piece.
- Heat through (about 2 more minutes) and serve.
