- 8 oz pasta (spaghetti or penne)
- 2 cups fresh kale, chopped
- 1 cup cherry tomatoes, halved
- 3 cloves garlic, minced
- 2 tbsp olive oil
- 1/2 cup Parmesan cheese, grated
- Salt and pepper to taste
- Juice of 1 lemon
Instructions
- Cook the Pasta: Boil a large pot of salted water and cook pasta according to package instructions until al dente. Drain, reserving 1 cup of pasta water.
- Sauté Garlic and Kale: In a large skillet over medium heat, add olive oil and minced garlic. Sauté until fragrant. Add chopped kale and cook until wilted.
- Add Tomatoes: Toss in halved cherry tomatoes along with salt and pepper. Cook until the tomatoes begin to burst.
- Combine: Add drained pasta to the skillet along with reserved pasta water. Stir until well combined and heated through.
- Finish: Squeeze lemon juice over the dish and sprinkle with grated Parmesan cheese before serving.
