Instructions
- In a food processor, blend parsley, Greek yogurt, olive oil, lemon juice, Dijon mustard, salt, and pepper until smooth.
- Marinate chicken breasts in half of the dressing for at least one hour (or overnight for enhanced flavor).
- Preheat grill or skillet to medium-high heat. Cook chicken for 6-7 minutes per side until cooked through.
- Drizzle remaining dressing over the cooked chicken before serving.
