- Fresh salmon fillets
- Garlic
- Unsalted butter
- Yukon Gold or Russet potatoes
- Lemon juice
- Fresh parsley
- Extra virgin olive oil
- Salt and pepper
Instructions
- Preheat the grill to medium-high heat. Pat salmon fillets dry with paper towels, brush with olive oil, and season with salt and pepper.
- Grill the salmon skin-side down for 6-8 minutes without moving. Flip gently and cook for another 4-6 minutes until flaky.
- While grilling, peel and chop potatoes into quarters. Boil in salted water for 15-20 minutes until tender.
- Drain the potatoes, return to pot, and add butter, minced garlic, salt, pepper, and milk or cream. Mash until smooth.
- Squeeze lemon juice over grilled salmon before serving alongside garlic mashed potatoes garnished with fresh parsley.
