Ingredients

  • Fresh salmon fillets
  • Garlic
  • Unsalted butter
  • Yukon Gold or Russet potatoes
  • Lemon juice

Instructions

  1. Preheat the grill to medium-high heat. Pat salmon fillets dry with paper towels, brush with olive oil, and season with salt and pepper.
  2. Grill the salmon skin-side down for 6-8 minutes without moving. Flip gently and cook for another 4-6 minutes until flaky.
  3. While grilling, peel and chop potatoes into quarters. Boil in salted water for 15-20 minutes until tender.
  4. Drain the potatoes, return to pot, and add butter, minced garlic, salt, pepper, and milk or cream. Mash until smooth.
  5. Squeeze lemon juice over grilled salmon before serving alongside garlic mashed potatoes garnished with fresh parsley.
