Instructions
- Heat olive oil in a large skillet over medium heat. Sauté onions and garlic until translucent.
- Add ground lamb, cooking until browned while breaking it apart.
- Stir in diced carrots and tomato paste until evenly coated.
- Pour in vegetable broth, scraping the skillet’s bottom for flavor. Let simmer for 10-15 minutes.
- Transfer to an oven-safe dish and top with puff pastry or mashed potatoes if desired.
- Bake at 375°F (190°C) for 25-30 minutes until golden brown.
