Ingredients
- 2 medium sweet potatoes
- 1 tablespoon olive oil
- 1 cup canned black beans, rinsed and drained
- ½ cup sour cream or Greek yogurt
- Fresh cilantro, chopped
Instructions
- Preheat your oven to 400°F (200°C) and wash the sweet potatoes thoroughly.
- Poke holes in each sweet potato with a fork, rub lightly with olive oil, and sprinkle with salt.
- Place sweet potatoes on a baking sheet lined with parchment paper and bake for 45-60 minutes until tender.
- While baking, rinse black beans and chop cilantro.
- Once baked, slice the sweet potatoes open, fluff the insides, and layer with black beans, sour cream or Greek yogurt, and cilantro.
- Serve hot and enjoy!
