- 1 cup elbow macaroni
- 1 cup sharp cheddar cheese (shredded)
- ½ cup Parmesan cheese (finely grated)
- ½ cup whole milk
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1 cup Panko breadcrumbs
- Salt and pepper to taste
Instructions
- Cook elbow macaroni in salted water until al dente; drain and set aside.
- In a saucepan, melt butter over medium heat, whisk in flour until smooth. Gradually add milk, stirring until thickened. Mix in cheddar and Parmesan cheese until melted.
- Combine cooked macaroni with cheese sauce in a bowl; stir until evenly coated.
- Allow mixture to cool slightly, then form into small balls and roll in Panko breadcrumbs.
- Preheat oven to 375°F (190°C) and bake bites on a parchment-lined baking sheet for 15-20 minutes or until golden brown.
