Instructions
- Prep your ingredients by chopping the onion and smashing the garlic.
- Heat olive oil in a tagine or large pot over medium-high heat and sear the seasoned chicken thighs until golden brown (5-7 minutes per side).
- Add onions and garlic, sautéing until translucent (about 3-4 minutes).
- Pour in chicken broth, then add ginger, cinnamon stick, and dried apricots; bring to a gentle simmer. Cover and let cook for 30 minutes on low heat.
- Stir in toasted almonds and fresh herbs, cooking uncovered for an additional 10 minutes.
- Serve over couscous or rice to soak up the delicious sauce, garnishing with extra herbs as desired.
