- 4 boneless, skinless chicken breasts
- 1 cup long-grain white rice
- 2 cups chicken broth
- 1 cup mixed fresh vegetables (bell peppers, carrots, peas)
- 2 tbsp olive oil
- ¼ cup low-sodium soy sauce
- 1 tsp garlic powder
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C) and spray a baking dish with nonstick cooking spray.
- Season the chicken breasts with salt, pepper, and garlic powder.
- In a bowl, combine rice, mixed vegetables, soy sauce, and chicken broth; stir well.
- Spread the rice mixture in the baking dish and place the seasoned chicken on top.
- Cover with aluminum foil and bake for 30 minutes. Remove foil and bake for an additional 15-20 minutes until fully cooked.
