  • 1 can (15 oz) chickpeas, drained and rinsed
  • 2 whole wheat tortillas
  • 1 cup fresh spinach leaves
  • 1 medium red bell pepper, diced
  • 1 ripe avocado, sliced
  • 2 tbsp freshly squeezed lemon juice
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Rinse and drain the canned chickpeas; pat dry.
  2. Mash the chickpeas in a bowl until slightly chunky. Mix in garlic powder, lemon juice, salt, and pepper.
  3. Chop the red bell pepper and slice the avocado; add to the chickpea mixture along with spinach.
  4. Lay each tortilla on a flat surface and spoon the chickpea mixture onto one side. Fold tightly like a burrito.
  5. Heat a non-stick skillet over medium heat and cook each wrap seam side down for about 3-4 minutes until golden brown; flip and repeat.
  6. Slice each wrap in half diagonally, serve warm with your favorite dipping sauce or enjoy alone.
