Instructions
- Wash and roughly chop the spinach. Gather all ingredients.
- In a bowl, whisk the eggs until frothy for an airy texture.
- Heat olive oil in a non-stick skillet over medium heat. Sauté spinach for 2-3 minutes until wilted.
- Pour the whisked eggs over the sautéed spinach; cook undisturbed for 1 minute until edges begin to set.
- Sprinkle feta, salt, and pepper on one half of the omelette, then fold it over carefully. Cook for another minute to desired doneness.
- Serve hot with toast or fresh fruit.
