- 4 bell peppers (red or yellow)
- 1 pound lean ground beef
- 1 cup cooked rice (white or brown)
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 1 cup shredded cheese (mozzarella or cheddar)
- 2 teaspoons Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Slice the tops off the bell peppers and remove the seeds.
- In a skillet, heat olive oil over medium heat; sauté onions and garlic until translucent.
- Add ground beef, cooking until browned. Stir in cooked rice, diced tomatoes, Italian seasoning, salt, and pepper.
- Stuff each pepper generously with the filling mixture.
- Place stuffed peppers in a baking dish with a little water at the bottom. Cover with foil and bake for 30 minutes.
- Remove foil, sprinkle cheese on top, and bake for an additional 10-15 minutes until cheese is melted.
