  • 1 pound lean ground beef
  • 1 cup cooked rice (white or brown)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup shredded cheese (mozzarella or cheddar)
  • 2 teaspoons Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice the tops off the bell peppers and remove the seeds.
  3. In a skillet, heat olive oil over medium heat; sauté onions and garlic until translucent.
  4. Add ground beef, cooking until browned. Stir in cooked rice, diced tomatoes, Italian seasoning, salt, and pepper.
  5. Stuff each pepper generously with the filling mixture.
  6. Place stuffed peppers in a baking dish with a little water at the bottom. Cover with foil and bake for 30 minutes.
  7. Remove foil, sprinkle cheese on top, and bake for an additional 10-15 minutes until cheese is melted.
