- 2 cups ripe heirloom tomatoes, diced
- ½ cup fresh basil leaves, chopped
- 2 garlic cloves, minced
- 2 tbsp extra virgin olive oil
- 1 tbsp balsamic vinegar
- Salt and pepper to taste
- 1 baguette or Italian bread, sliced into ½ inch pieces
Instructions
- Preheat oven to 400°F (200°C).
- In a bowl, combine diced tomatoes, chopped basil, minced garlic, olive oil, balsamic vinegar, salt, and pepper.
- Arrange bread slices on a baking sheet and drizzle lightly with olive oil. Toast in the oven for 8-10 minutes until golden brown.
- Let the bread cool slightly before topping with the tomato mixture.
- Serve immediately while warm.
