- 1 cup mixed vegetables (carrots, peas, bell peppers, corn)
- 2 green onions (chopped)
- 2 cloves garlic (minced)
- 3 tablespoons low-sodium soy sauce
- 1 tablespoon sesame oil
Instructions
- Gather ingredients and prepare vegetables by dicing them into small pieces.
- Heat a tablespoon of oil in a large skillet or wok over medium-high heat; add minced garlic and sauté until fragrant.
- Add mixed vegetables and stir-fry for about 3–4 minutes until tender yet crisp.
- Stir in the cooked rice and continue to stir-fry for another 3 minutes until heated through.
- Pour in soy sauce and drizzle sesame oil over the mixture, tossing well to combine.
- Fold in chopped green onions just before serving.
