Instructions
- Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a large bowl, cream together unsalted butter and sugar until light and fluffy (3-4 minutes).
- In a separate bowl, whisk together flour and baking powder. Gradually mix into the creamed mixture, alternating with milk.
- Add eggs one at a time, mixing well after each addition. Stir in vanilla extract until combined.
- Drop rounded tablespoons of dough onto baking sheets, spacing them 2 inches apart. Bake for 10-12 minutes until edges are golden brown.
- Cool on baking sheets for 5 minutes before transferring to wire racks.
- Whip heavy cream until stiff peaks form; slice cookies in half horizontally and fill with whipped cream.
- Drizzle or dip cookies in melted chocolate chips or glaze.
