- 1 cup pearl couscous
- 2 cups water
- 1 cup cherry tomatoes (quartered)
- 1 cup cucumber (diced)
- 1/4 cup red onion (finely chopped)
- 1/2 cup feta cheese (crumbled)
- 1/4 cup fresh parsley (chopped)
- Juice of 1 lemon
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- 1. Cook the Couscous: In a medium saucepan, bring 2 cups of water to a boil. Stir in 1 cup of couscous, cover, and simmer on low heat for about 10 minutes until fluffy.
- 2. Prepare the Vegetables: While the couscous cooks, chop cherry tomatoes, cucumber, and red onion. Combine them in a large mixing bowl.
- 3. Add Flavor: Crumble feta cheese and add chopped parsley to the vegetable mixture.
- 4. Make the Dressing: In a small bowl, whisk together lemon juice and olive oil; season with salt and pepper.
- 5. Combine: Fluff couscous with a fork and add it to the veggies. Pour dressing over the mixture and gently toss until well combined.
- 6. Serve: Transfer to serving dishes or a large platter, garnish with additional parsley if desired, and enjoy!
