- 8 slices fresh whole grain bread
- 4 oz cream cheese (plain or flavored)
- 1 medium cucumber, thinly sliced
- 1 medium bell pepper (any color), thinly sliced
- 1 ripe avocado, mashed
- 1 cup fresh spinach or lettuce leaves
- 2 tbsp fresh herbs (dill or parsley), finely chopped (optional)
- Salt and pepper to taste
Instructions
- Gather and wash all vegetables. Slice them into thin pieces.
- In a bowl, mix cream cheese with herbs if desired. Season with salt and pepper.
- Spread a generous layer of the cream cheese mixture on one slice of bread.
- Layer cucumber, bell peppers, avocado, and greens on top of the spread.
- Top with another slice of bread and press gently to secure.
- Cut each sandwich into quarters for easy serving.
- Arrange on a platter and serve immediately or refrigerate briefly before serving.
