- 4 cups mixed greens (spinach, arugula, romaine)
- 1 cup cherry tomatoes, halved
- 1 medium cucumber, sliced
- 1 ripe avocado, sliced
- ½ cup crumbled feta cheese
- 2 tbsp extra virgin olive oil
- 1 tbsp balsamic vinegar
Instructions
- Rinse the mixed greens under cold water and pat dry.
- Halve the cherry tomatoes and slice the cucumber into thin rounds.
- Cut the avocado in half, remove the pit, scoop out the flesh, and slice into wedges.
- In a small bowl, whisk together olive oil and balsamic vinegar.
- In a large bowl, layer mixed greens followed by tomatoes, cucumbers, avocado slices, and feta cheese.
- Drizzle with dressing and toss gently until well combined.
