Instructions
- Preheat the oven to 350°F (175°C). Mix graham cracker crumbs with melted butter until crumbly. Spread on a baking sheet and bake for 8-10 minutes until golden. Cool completely.
- In a mixing bowl, beat softened cream cheese, powdered sugar, and vanilla extract until smooth (about 3 minutes).
- Whip heavy cream in a separate bowl until stiff peaks form. Gently fold into the cream cheese mixture.
- Fill ice cream cones with cheesecake filling using a piping bag or spoon. Top with sliced strawberries and sprinkle with the baked crunch mixture.
- Chill assembled cones in the fridge for 30 minutes before serving.
