- 1 lb ground beef
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 cups red enchilada sauce
- 2 cups shredded cheddar or Monterey Jack cheese
- 8 corn tortillas
- Fresh cilantro, for garnish
- Sour cream, for serving
Instructions
- In a skillet over medium heat, brown the ground beef. Add onion and garlic; sauté until softened.
- Stir in cumin, chili powder, salt, and pepper until well combined.
- Warm corn tortillas in a dry skillet for about 30 seconds per side.
- Spread the meat mixture onto each tortilla, roll tightly, and place seam-side down in a greased baking dish.
- Pour red enchilada sauce over the rolled tortillas and sprinkle with shredded cheese.
- Preheat oven to 375°F (190°C) and bake uncovered for 20-25 minutes until cheese is bubbly and golden.
