- 3–4 boneless, skinless chicken breasts
- 2 cups mixed vegetables (bell peppers, broccoli, carrots)
- 2 tablespoons extra virgin olive oil
- 3 cloves garlic, minced
- 2 tablespoons low-sodium soy sauce
- 1 tablespoon lemon juice
- Salt and freshly ground black pepper to taste
Instructions
- Wash and chop the vegetables into bite-sized pieces. Mince the garlic.
- Season chicken breasts generously with salt and pepper.
- In a large skillet over medium-high heat, add olive oil until shimmering; cook the chicken for about 6-7 minutes per side until golden brown.
- Remove the chicken from the skillet. Add garlic and mixed vegetables; sauté for about 5 minutes until tender-crisp.
- Return the chicken to the skillet, drizzle with soy sauce and lemon juice, and stir gently to combine for another minute before serving.
