  • 1 medium onion, chopped
  • 34 garlic cloves, minced
  • 1-inch piece fresh ginger, grated
  • 1 can (14 oz) coconut milk
  • 1 can (14 oz) diced tomatoes
  • 2 tablespoons curry powder
  • Fresh cilantro for garnish

Instructions

  1. Chop onion, garlic, ginger, and tomatoes.
  2. Heat oil in a large pot over medium heat. Sauté onions until translucent (about 5 minutes).
  3. Add minced garlic and grated ginger; stir until fragrant (about 1 minute).
  4. Mix in curry powder and diced tomatoes; cook until thickened (around 3 minutes).
  5. Stir in boneless chicken thighs and pour in coconut milk. Combine well.
