- 1 lb boneless chicken thighs
- 1 medium onion, chopped
- 3–4 garlic cloves, minced
- 1-inch piece fresh ginger, grated
- 1 can (14 oz) coconut milk
- 1 can (14 oz) diced tomatoes
- 2 tablespoons curry powder
- Fresh cilantro for garnish
Instructions
- Chop onion, garlic, ginger, and tomatoes.
- Heat oil in a large pot over medium heat. Sauté onions until translucent (about 5 minutes).
- Add minced garlic and grated ginger; stir until fragrant (about 1 minute).
- Mix in curry powder and diced tomatoes; cook until thickened (around 3 minutes).
- Stir in boneless chicken thighs and pour in coconut milk. Combine well.
- Bring to a gentle simmer and cook uncovered for 20-25 minutes until chicken is tender.
- Serve warm over rice or with naan bread.
