- 1 lb boneless, skinless chicken breasts
- 2 bell peppers (mixed colors)
- 1 large onion
- 3 cloves garlic
- 2 cups cooked rice (white or brown)
- 2 tbsp taco seasoning
- Fresh cilantro
- Juice of 1 lime
- 2 tbsp olive oil
Instructions
- Cut chicken into bite-sized pieces and thinly slice bell peppers and onion.
- Heat olive oil in a skillet over medium-high heat. Sauté chicken until golden brown, about 5-7 minutes.
- Add minced garlic and cook for an additional 30 seconds until fragrant.
- Stir in bell peppers and onions; cook for about 3-4 minutes until slightly softened.
- Sprinkle taco seasoning over the mixture, adding a splash of water if needed. Let simmer for another minute.
- To serve, layer cooked rice in bowls, top with the chicken fajita mix, drizzle lime juice, and garnish with fresh cilantro.
