- 1 pound boneless, skinless chicken breasts
- 3 bell peppers (red, yellow, green)
- 1 large onion
- 2 tablespoons olive oil
- Fajita seasoning (store-bought or homemade)
- Sour cream (for serving)
Instructions
- Slice chicken breasts into thin strips and chop bell peppers and onion.
- In a bowl, mix olive oil and fajita seasoning; add chicken and coat well. Marinate for at least 15 minutes.
- Heat a skillet over medium-high heat. Sauté chopped vegetables until soft yet crisp (about 5-7 minutes).
- Push veggies aside; add marinated chicken strips and cook until no longer pink (about 5-6 minutes).
- Combine chicken with vegetables and stir until heated through (about 1 minute).
- Serve warm in tortillas topped with sour cream.
