- 2 cups shredded cooked chicken

- 1/2 cup sliced bell peppers
- 1/4 cup finely chopped red onion
- 4 large flour tortillas
- Olive oil for cooking
- Cumin, chili powder, salt, and pepper
Instructions
- Heat olive oil in a skillet over medium heat.
- In a bowl, mix shredded chicken with bell peppers, onion, cumin, chili powder, salt, and pepper.
- Place one tortilla in the skillet; sprinkle half with cheese and top with half the chicken mixture. Fold the tortilla.
- Cook for 3-4 minutes until golden brown; flip and cook until crispy and cheese melts.
- Repeat with remaining ingredients.
